Choc Swirl Banana Bread

Its a winning combo, really. Chocolate & Banana - you can’t go wrong. But let me warn you, the slices won’t last long… best to make two loaves.

INGREDIENTS.

  • 3 x Overripe Bananas, mashed 

  • 2 x Eggs 

  • 1/3 x Cup Milk 

  • 3 x Tablespoons oil of choice

    (use oil/butter/apple puree/whatever you desire)

  • 1/8 x Cup honey 

  • 1 x Cup Almond Meal 

  • 1/2 x Cup Wholemeal flour 

  • 3 x Teaspoons Baking Powder 

  • 1/4 x Cup Cacao Powder 


METHOD. 

  1. Pre-heat oven to 180C. Line a 25cm loaf pan with baking paper.

  2. In a small mixing bowl, combine banana, eggs, milk & oil and whisk together.

  3. Add in almond meal, wholemeal flour and baking powder. Seperate 1/4 of the mixture into a smaller bowl and stir in cacao powder, set aside. 

  4. Pour the banana bread mixture into the pan and then dollop over the choc-banana mixture. Gently swirl the two mixtures together to combine. 

  5. Bake for 45 minutes or until firm to touch. Leave to cool in pan, then slice up.


Makes 8 Generous Slices.
